Holšteinas šķirnes govis ir produktīvākās pasaulē. Latvijā labākās Holšteinas govis saražo vairāk nekā 16 000 kg 305 dienās. Latvijas Holšteinas šķirnes govju pienā vidēji ir 3.22% olbaltumvielu saturs un 4.14% tauku saturs. Holšteinas šķirnes govis ir lielas, ar labu eksterjeru, labu tesmeņa formu, izcilām spējām uzņemt daudz rupjās lopbarības, ar melni-baltu vai sarkani-baltu krāsu salikumu apmatojumam. Vesels Holšteinas šķirnes teļš, piedzimstot vidēji, sver 45 kg. Pieaugusi Holšteinas govs vidēji sver 600-900 kg un krustu augstums ir 145 cm un vairāk.
