The Holstein breed was developed in the 18th century in the Netherlands, in the regions of Friesland and Jutland, when after floods and various diseases the country needed a new dairy-type cattle breed that would give a lot of milk, whose cows would be resistant to diseases and could be used for 10 – 14 lactations. Holstein cows are the most productive in the world. In Latvia the best Holstein cows produce more than 16 000 kg in 305 days. The milk of Latvian Holstein cows contains on average 3.22% protein and 4.14% fat. Holstein cows are large, with good conformation, a good udder shape, an outstanding ability to consume large amounts of roughage, with a black-and-white or red-and-white coat colour combination. A healthy Holstein calf weighs on average 45 kg at birth. An adult Holstein cow weighs on average 600-900 kg and its height at the rump is 145 cm and more.
